Menu Plan for August 31- September 6

Buffalo Chicken Wing Dip

Friday night was our Wizards of Waverly Place House Party. We had a great turnout! 16 kids and 8 adults (three adults didn't stay). Princess enjoyed having her girlfriends over and Rocket boy had a couple of friends there too. I didn't want him to be left out. The kids had fun and there were lots of yummy munchies. I made Chicken Wing Dip (more for the adults than the kids because it is spicy). It's so yummy and everyone will love it. Buffalo Chicken Wing Dip 2 packages of cream cheese, softened 3/4 cup of hot sauce (I use buffalo sauce, not sure if it's different from hot sauce or not) 1 cup of ranch dressing 2 cups of diced, cooked chicken 1 cup shredded cheddar cheese Preheat oven to 350 degrees. Stir together cream cheese and hot sauce until well blended. It's helpful if you microwave the cream cheese a bit to make it easy to incorporate the hot sauce. Then mix in ranch dressing, chicken and cheese. Spread into a 9x13 baking dish. Bake for 30 minutes. I served w

How the week is going

We're in the last bit of the month were grocery money is scarce. So I am praising God at how we still have plenty to eat until next payday! God is so good! I will still need to buy milk and a couple of other things but not much at all. Payday is the 3rd so not too much longer! Tonight we'll be eating at church. Then tomorrow night we'll have leftover Pan-Roasted Mushroom & Pepper Pork Enchiladas . Plus I will probably make rice to go along with it. Friday night we are hosting a Wizards of Waverly Place House Party. Princess will have a few friends over and the boys hopefully will have one or two each as well. Then we'll have munchies and watch the new Wizards of Waverly Place movie on the Disney Channel. I will post more about the party after we have it. I was approved to host it through Houseparty.com . It's an awesome site to get free things for hosting parties. Nothing to buy or sell just kind of a way for companies to do word of mouth advertising. By the way

Pork Enchiladas and Homemade Enchilada Sauce

Sorry I've been absent a bit. Things have been hectic here and haven't had a chance to try any new recipes to post. However, I finally got to make these so I'm posting it for you here. These are so yummy! I got the recipe from a lady named Jessica on the Cooking For Your Family board. The only thing I change is that I use a bit more mushrooms and green chilies instead of green pepper. You can use different cheeses. I used colby and monterey jack this time. I think my oven temp was a bit off because my enchiladas weren't as dry as when I had made them before. Just make sure that most of the sauce it absorbed and the tops appear dry. This is so good! Pan-Roasted Mushroom & Pepper Pork Enchiladas: Ingredients: 1 lb pork tenderloin (boneless) 1 green bell pepper, finely diced 1/2 tin presliced/prewashed mushrooms 1 small (or 1/2 med) Vidalia onion, finely diced 6-8 ounces fat free cream cheese 1 cup shredded mozzarella cheese (or favorite melting cheese) vegetable oil

Menu Check up- How have I done

Monday we had the crockpot pork loin. I just put it in the crockpot all day with salt and pepper. I did add about a cup of water because I like extra juice to use for gravy or to add some with meat to freeze. I served it with carrots and mashed potatoes. I packaged two sandwich bags packed full for BBQ sandwiches and the pork enchiladas and put in the freezer. Last night we had nachos for dinner. Just nachos, melted cheese, taco seasoned ground beef (from the freezer) and tomatoes. Tonight we'll be eating at church. So that brings me to the rest of the week. I really want to make the enchiladas tomorrow. I have a very full day though and am not sure it will work out for sure yet. So if not, it will be made on Friday. If I don't have time tomorrow we'll probably do beans and cornbread with sliced tomatoes. So far, I over planned. Which is okay because everything I planned was from my freezer or fridge. Menu Plan for Aug-17-23

It's been awhile since I've made a menu plan. I think I am more of a stockpiller then make meals from what we have most of the time. However, I really would like to get better at menu planning. So here it goes for this week. This is a loose plan. I'm not sure which days we'll have what yet. But here's an idea anyway. :) Recipes that are new will follow after I've made them. End of summer

Today was registration day and the kids go back to school on Wednesday. I am going to be a bit absent until then. I really want to take tomorrow and enjoy the last day before classes start. We'll be going swimming in the morning with friends (which we did today as well!) and just being with each other. I am really going to miss these sweet punkins during the day. Sure, there are times I wouldn't mind a break. However, I love having them home. Five days a week, 7 hours a day is too long to be gone. I love my babies. See you all a bit later this week! Did you know and a few random things

Thank you all for your comments yesterday! I haven't had a chance to reply to emails/comments since we were gone to Nashville most of yesterday. Hopefully I will get to spend a little time catching up soon! Just know that any email or comment means so much to me! Yesterday Monkey had his appointment in Nashville. Everything looked good and he goes back in 6 months. My mother-in-law had wanted to come with us and take the kids to Chuck E Cheese's but didn't feel well. She decided to send the kids money to go. The kids always enjoy it. We don't have one in the town where we live so it's a rare treat for them to get to go. Did you know, that if you buy the kids cups they sell there (the reusable plastic ones), you can bring them back and use them again and not have to pay for your drink the next time? We now have enough cups for each of us to have one. So yesterday when we went, we didn't have to pay for any drinks. That is a huge money saver! Also, you can sign

Squash Casserole....yummmm!

I love squash casserole! I've actually never made it but have had it before. I had some squash in the freezer and decided to make it tonight for dinner. We're still living out of the pantry, turns out I won't get to go grocery shopping until Saturday or maybe Sunday. This recipe turned out absolutely yummy! I will definitely make it again! Squash Casserole 2 1/2 pounds of yellow squash, sliced 1/2 stick of butter plus 2 tablespoons 1 small onion, diced 2 eggs, beaten 1/4 cup of mayonnaise 2 tsp sugar 1 tsp salt 1 cup of shredded sharp cheddar cheese about 3/4 of a sleeve of buttery crackers (I used the generic ritz kind), crushed Cook squash, covered, in a small amount of water. Cook until tender, then drain well. I used a colander to drain them and then pressed on them with some paper towels to get as much water out as I could. Return squash to the pot. Combine with 1/2 stick of butter and mash well. Add onion, eggs, mayo, sugar, salt and cheese. Pour into a greased 8x8 b

Did you get your free Schwan's?

Did you get your free Schwan's ? I ordered a gallon of chocolate almond ice cream. I have heard their ice cream is wonderful! I have never ordered from Schwan's and probably won't again since it's a bit too pricey for my budget. I'm very excited about getting the ice cream! It was only 8 cents after discount! They're giving away $10 worth of free food. It may be over by now but check it out just in case if you haven't already. So what did you all order? Happy eating!
