Mushroom Casserole

Watch me make this over on my YouTube channel Faith, Food and Family ! Mushroom Casserole Ingredients: 16 ounces of Baby Bella Mushrooms, sliced 3 tablespoons of all purpose flour 3 tablespoons of butter 1 cup of heavy cream 1/2 to 3/4 cup of Peppridge Farms Herb Seasoned Classic Stuffing mix in the blue bag (use 3/4 cup if you like a lot of topping) 2 tablespoons of butter, melted (you may want to use an additional tablespoon if you use 3/4 cup of stuffing mix) salt, pepper, onion powder and garlic powder to taste In a skillet over medium heat, melt 3 tablespoons of butter and saute the mushrooms until the begin to release their liquid. Then stir in the 3 tablespoons of flour and desired seasonings. Let the flour cook for a couple of minutes and contantly stir everything around while the flour cooks. Copycat Cracker Barrel Hashbrown Casserole

It's crispy on the outside and then there's that yummy cheesy goodness inside. This one is so much like Cracker Barrel's and I know you'll enjoy it. I usually use cheddar cheese, but I have heard if you use colby it's even more like Cracker Barrel's. Hashbrown Casserole Ingredients: 2 cups of cheese (I used cheddar) 1 10 3/4oz can of cream of chicken soup 1 cup of sour cream 1/2 cup onion (diced) (I usually leave this out because my husband doesn't like onions) 1/4 cup of butter, melted 1/4 tsp salt (I leave this out) 1/4 tsp pepper 1 32ox bag of shredded hashbrown potatoes (it seems most bags are 30oz now and that was what I used) Preheat oven to 350 degrees. Grease a 9x13 baking pan. In a large bowl, mix together the 1st 7 ingredients. Then fold in the potatoes. Pour in to your pan. Bake for 1 hour. So simp...

Restaurant Style Mexican Rice

My kids love the rice from our local Mexican restaurant. So, I wanted to try to recreate it at home. They love this one just as much! It’s so delicious! We often eat it with black beans, salsa and sour cream. We also love to serve it with fajitas and enchiladas. So many ways you can use this tasty rice. Cook a batch on the weekend and use it for meals throughout the week. Restaurant Style Mexican Rice Ingredients: 3 ¼ cups of chicken broth or stock 2 cups of rice (I usually use Jasmine or Basmati) ½ tsp of ground cumin 2 tsp garlic powder 1 tsp onion powder ¼ tsp Mexican oregano 8oz can of tomato sauce 3 tbsp of oil (I use canola) In a large saucepan, heat 3 tbsp of oil over medium heat. Add rice and stir to coat the rice with the oil. Cook the rice until golden, taking care not to let it burn. You can turn the heat down a bit if it starts getting too dark. Mexican Rice

This is a very yummy rice recipe. I served it with burritos and it was a delicious addition! I found this recipe on Allrecipes . I love finding recipes on that site. You always can read through the reviews and see what people thought and what they changed. Mexican Rice 3 tablespoons vegetable oil 1 cup uncooked long-grain rice 1 teaspoon garlic salt 1/2 teaspoon ground cumin 1/4 cup chopped onion 1/2 cup tomato sauce 2 cups chicken broth Heat oil in a large saucepan over medium heat and add rice. Cook, stirring constantly, until golden. While rice is cooking, sprinkle with salt and cumin. Stir in onions and cook until tender. Stir in tomato sauce and chicken broth; bring to a boil. Reduce heat to low, cover and simmer for 20 to 25 minutes. Fluff with a fork. Happy eating!

Easy Meatloaf and Fried Cabbage

I decided to use Rocket Boy's Texas plate. :) The best meatloaf recipe I have tried (I haven't tried many yet because I like this one so much) is using Hunt's Seasoned Tomato Sauce for Meatloaf. It always turns out perfect for me. It's super simple and super tasty! I served it with boxed potatoes (ran out of time to do fresh) and fried cabbage (well not really fried but wasn't fully steamed either LOL). Hunt's Meatloaf Recipe 1 can (15.25oz) Hunt's Family Favorites Seasoned Tomato Sauce for Meatloaf 2 pounds of lean ground beef 2 large eggs, beaten 1 cup of quick cooking oats, bread crumbs or crushed crackers (I used half crackers, half oats) Preheat oven 400 F. Combine half of Hunt's Seasoned Tomato Sauce for Meatloaf with the ground beef, eggs, bread crumbs, onions; mix well. Place mixture in loaf pan. Bake uncovered for 1 hour. Remove from oven; drain. Fried Chicken Breasts with Roasted Red Potatoes and Peppers

This was a very yummy dinner! I didn't use a recipe for the chicken but will tell you round about what I did. Sorry for no exact recipe. I got a package of boneless skinless chicken breasts at Kroger and asked them to butterfly them (only separated completely). I hate touching raw chicken so I was thrilled that they would cut the chicken for me! I rinsed the breasts and then put the between pieces of wax paper and pounded them a little thinner. Then patted them dry with paper towels. In a bowl I put about 2 1/2 cups of flour and sprinkled in some italian seasoning, season salt, salt, and pepper. I didn't measure any of these just eyeballed it. Mix well. In another bowl, I pour in about 1- 1 1/2 cups of buttermilk. Then added about 1/4-1/2 cup of buffalo sauce. I first dipped the chicken in the buttermilk/buffalo sauce and then in the flour mixture. In a medium nonstick skillet I had about 1/4-1/2 inch of oil heating. Cheesy Hashbrown Casserole

I love hash brown casserole. It's crispy on the outside and then there's that yummy cheesy goodness inside. Years ago I tried a recipe and the sour cream was just overwhelming to me. I like sour cream but it was most of what I could taste. So I never tried to make it again. Then I was at church one Wednesday night and they had hashbrown casserole. It was sooo good! And no sour cream taste. So I got the recipe and made it tonight. Absolutely perfect! It was hard to stop eating this one! I also made chicken tenders (just marinated in italian dressing, then seared and baked), green beans and per my daughter's request- cream style corn. It was a yummy meal! 'Ohana Night

One of our favorite meals at Disney World last year was 'Ohana. It was at the Polynesian Resort and it was very yummy. We had a wonderful seat right next to the window that night and had a great view of the nightly fireworks. It was really awesome. So we decided to recreate that meal at home. First up we have Terryaki Chicken and steak tips. Now at 'Ohana, they serve everything off these skewers and everything is grilled but we don't have a grill right now. I cooked the chicken in the oven with bottled marinade on it. They don't have terryiaki chicken but I thought since we weren't grilling it would add additional flavor. For the steak tips, I put a little oil in the pan and dry the tips, then flip them over. I let them cook for a bit and then I add about a cup of beef stock and let them simmer until the liquid has evaporated. I used eye of round because it was on sale and it turned out very tender! Fiesta Salad

I made a double recipe of this for our Ladies Home Fellowship last night. We get together once a month and usually have a themed get together. Last night it was hawaiian cruise. Our host, Wendy, did an awesome job turning her back deck into a cruise deck for us. The slight breeze made me really feel like we were in Hawaii. Well, at least I can pretend! :) Once the sun went down it was totally awesome with lights and candles. Had a great time! Here's how to make this yummy recipe. Fiesta Salad 2 cups of corn (last night I used fresh and sauteed it a bit, you can use canned, frozen, etc.) 1 avocado, diced 4 roma tomatoes, diced 1 small vidalia or red onion diced 1/2 tsp lime zest juice of half a lime handful of cilantro, chopped 4-6 tbsp of ranch dressing (just use what you want for your desired creaminess) can of black beans, rinsed and drained salt and pepper to taste Just combine all ingredients in a bowl and mix together well. Corn Cakes

I made these corn cakes last night. They were really yummy. I didn't measure or go by a recipe so I will tell you what I did. I put some corn meal mix in a bowl (not the jiffy type mix but regular cornbread mix, Martha White brand). You can really use as much as you want. I probably put about 3-4 cups in there. Then added one egg and a bit of salt. I then added milk, a little at a time until it was a thick cornmeal batter. Thicker than you'd want it for cornbread. Then I added about a 1/2 cup of shredded cheddar cheese to the batter. Some green chilis and/or corn would be great added to it also. Fry in a nonstick skillet over medium heat in a bit of oil and butter. I put about 1/2 a cup of oil and 3 tbsp of butter in the pan at first but they soaked up quite a bit of that and I refused to add any more. LOL So they ended up just cooking in the pan with no oil and did just fine. So you definitely would need a nonstick skillet to not have to use the oil. I still would use some on...
