Crockpot Chicken Tortilla Soup

Watch me make this over on my YouTube channel Faith, Food and Family ! Chicken Tortilla Soup Ingredients: 1 onion, diced 3 cloves of garlic, minced (or you can sub garlic powder) 1 tbsp chili powder 1.5 tsp cumin 1 tsp Mexican Oregano 1 28oz cans of crushed tomatoes 32 oz carton of chicken broth/stock 1 8 oz bag of frozen corn 1 4oz can of green chiles 1 can of petite diced tomatoes (can use a can of rotel for more flavor) 1 15oz can of black beans (rinsed and drained) 3-4 cups of chicken cooked and diced or shredded Salt and pepper to taste Place all ingredients in the slow cooker (crockpot) and stir together. Cook on high for 4-6 hours. Add tortilla chips, avocado, cheese, etc. Whatever toppings you want.

Crockpot Southwestern Taco Chili

Crockpot Southwestern Taco Chili Ingredients: 1 pound of Velveeta cubed or 2 8oz packages of the Velveeta Shreds 1 ½ pounds of ground beef, cooked 1 can of cream style corn 2 cans of Rotel 1 tsp cumin 1 pkg of taco seasoning Combine all ingredients in your crockpot. Cook on High for 3 hours or Low for 4-5. Serve with desired toppings. Some suggestions are tortilla chips or strips, sour cream, jalapenos, and avocadoes. Slow Cooker Chicken Burrito Bowls- Updated!

So I posted this recipe a couple of years ago. I have updated it just a tad and just want to share this wonderful recipe with you. This stuff is delcious and has so many uses! Burrito bowls, burrito fillings, enchilada filling, so many options! It make a large portion and is super easy to throw together. What's even better is that it cooks in the crockpot! Definitely a great option for meal prep as well! Let's get started! Slow Cooker Chicken Burrito Bowls

Need a quick, easy and delicious meal? This is it! It cooks in the slow cooker and makes enough for leftovers. This would be great to take for lunch and you could even meal prep with this and portion out in individual containers. This stuff is so good! Let's get started! Slow Cooker Burrito Bowls Ingredients: 3 pounds of boneless, skinless chicken breasts (I sometimes use tenders as well) 1 can of black bean (drained and rinsed) 1 can of Rotel 1.5 cups of corn (can use frozen, fresh off the cob or canned) 1 cup of salsa 1 tbsp of jarred jalapenos, diced (you can use more or even leave them out) 6 cloves of garlic, minced 1.5 onions, diced 1 tbsp of chili powder 2 teaspoons of cumin salt and pepper to taste Add ingredients to your slow cooker (I use a 6 quart oval for this). Easy Slow Cooker Stroganoff

Hi everyone! I didn't remember to take a picture of this but it was sooo good. Easy Slow Cooker Stroganoff 2-3 pounds of beef stew meat (I used part beef stew meat and part stir fry strips that were marked down) 2 cans of cream of mushroom soup 1 packet of onion soup mix 8oz beef broth 1 small jar of sliced mushrooms Place meat in the crockpot. I mixed the soup, soup mix, broth and mushrooms in a bowl and then poured on top of the meat. I am sure you could just dump everything in as well. Cook on high for 4-6 hours or until meat is tender. This was so yummy! It was plenty salty enough and I used the healthy request cream of mushroom soup with reduced sodium. So I wouldn't add any additional salt. Serve over noodles or rice. Delicious!! Beef Pot Roast with Maple Sweet Potatoes & Cider Gravy

This looked so tasty on Cooking During Stolen Moments that I just had to make it. I decided to do it in the crockpot instead. This seemed like a perfect meal to do in the crockpot. You can view the recipe here . Here's what I did to change it to a crockpot meal. I used the chuck roast that I got from Food Lion. I seared both sides and then placed it in the crockpot. I added the cut sweet potatoes on top of the roast and around the sides. In the pan, I added the salt, pepper and some italian seasoning (because I was out of thyme) and the chopped onions to the pan. I sauteed those until tender. I added the broth and apple cider and let that cook for a couple of minutes, making sure to get up all of the bits on the bottom of the pan. Then I poured this on top of the potatoes and roast in the crockpot. I cooked it on high for about 5 hours and then turned it down to low for about 2 more hours. It turned out perfect. Time has certainly gotten away from me this month. My intentions were to blog. But every week at least one person has been sick. Nothing too bad thankfully but just enough when you add in other things that I have not been able to blog like I would have liked. So I am sorry I have been missing. I have a very yummy recipe to offer up to help make up for it. :) I had some friends over the other night and my intentions were to make a salad and dessert. However, the weather has started to cool down this week and I wanted to take advantage of that. I wanted to make soup instead. So I decided on Chicken Tortilla Soup in the crockpot. Chicken Noodle Soup

I know it's summer but it hasn't been as hot here and I was wanting chicken noodle soup. My tummy hasn't felt great today. Not sure if it was something I ate or a virus. And one of the things I like to eat when my tummy doesn't feel as good (once I feel like eating anyway) is potatoes diced and boiled in chicken broth. So I thought why not chicken noodle soup! I decided to use my crockpot because I like to make a large amount at a time. That also helped not heat the house up so I can enjoy soup. My favorite noodles to use in chicken noodle soup is the real homemade dried noodles. I found these at Kroger. They're a bit more expensive so we don't eat them often. When I make this soup, I've never used a recipe. So amounts are not exact and can be played with depending on your liking. I'm in love....

......with my crockpot! I used it yesterday to cook 4 pounds of chicken breast (bone-in, on sale for .99 a pound!). When I was taking it off the bone last night, I tried a bite. So tender! I usually boil my chicken on the stove or bake it in the oven. But nothing can beat how tender it was out of the crockpot! I had been very frustrated lately because every time I've cooked chicken it's been kind of tough. I probably do overcook it a bit because I am always wanting to make sure it's done. But I just haven't been happy with the texture. I know most of y'all have already been sold on crockpot cooking but I am truly amazed at how well things turn out in the crockpot. Using my crockpot: cooking beans and a coleslaw recipe

One of my favorite meals is at a place called Huck Finn's in Pigeon Forge, TN. I love the "vittles" they bring out to you, served family style all you can eat. White beans, cole slaw, hush puppies, pickles and onions. I love their catfish as well. I haven't been there in a long time. Yesterday I decided to make white beans, coleslaw and corn cakes (instead of hushpuppies). I served it with dill pickles and sliced tomatoes. It was a frugal yet yummy meal! I hadn't cooked beans in the crockpot before but I looked a bit online and it seemed easy enough. This is what I did. Crockpot white beans 2 16 oz bags of white beans water bacon paste (from Soupbase.com) 1 packet of onion soup mix (I only used 1/2 and it definitely could have used a whole pack if not more) salt Look through beans and discard any stones, broken beans, etc. Rinse beans and place in crockpot. Love my crockpot!

I love my crockpot! I have had a crockpot for years and never really used it.That is until I tasted a boston butt pork roast that my friend cooked in hers. It was so tender and yummy! I couldn't believe that's what happened in a crockpot! So I decided I was going to dig out my crockpot and make one too. I made a boston butt pork roast in mine and it was really good. I do my roasts in there if I can. I never want to put another roast in the oven! Last night I cooked a pork loin in there (on sale for $1.49/lb!). It turned out so yummy and just so tender. It was delicious! And one of the best parts, it didn't heat up my house! Which is wonderful during the summer. I got my electric bill yesterday and was shocked how much it jumped from last month's. It was way more than we had planned for so any savings in electricity is very good! I have to admit, I haven't tried much other than roasting meats in it. I'd like to try some other recipes in my crockpot since I now l...
