Crockpot Chicken Tortilla Soup

Watch me make this over on my YouTube channel Faith, Food and Family ! Chicken Tortilla Soup Ingredients: 1 onion, diced 3 cloves of garlic, minced (or you can sub garlic powder) 1 tbsp chili powder 1.5 tsp cumin 1 tsp Mexican Oregano 1 28oz cans of crushed tomatoes 32 oz carton of chicken broth/stock 1 8 oz bag of frozen corn 1 4oz can of green chiles 1 can of petite diced tomatoes (can use a can of rotel for more flavor) 1 15oz can of black beans (rinsed and drained) 3-4 cups of chicken cooked and diced or shredded Salt and pepper to taste Place all ingredients in the slow cooker (crockpot) and stir together. Cook on high for 4-6 hours. Add tortilla chips, avocado, cheese, etc. Whatever toppings you want.

So I posted this recipe a couple of years ago. I have updated it just a tad and just want to share this wonderful recipe with you. This stuff is delcious and has so many uses! Burrito bowls, burrito fillings, enchilada filling, so many options! It make a large portion and is super easy to throw together. What's even better is that it cooks in the crockpot! Chicken (Green) Enchilada Soup

Nothing says fall like soup! It's always so nice for it to start to cool down a bit and enjoy a warm, comforting bowl of soup. This soup takes a spin off from the traditional red enchilada soup and goes green, using salsa verde. It is a delicious soup version of green chicken enchiladas! You can even serve some torilla chips on the side, maybe with some avocado or guacamole. Let's get started! Mexican Rice and Black Bean Burritos or Burrito Bowls

A quick, easy dinner for tonight. Yummy burritos with chicken, cheese, rice and beans. I will admit, this looked much better before I tried to fold it. I filled mine a little too full, so be careful about that. We absolutely love these Tortilla Land flour tortillas (not sponsored, Tortilla Land doesn’t know I exist! lol). They just taste so much better than already made tortillas. I just wish I could find the burrito size. That would have helped my overfilling issue. This is also delicious as a burrito bowl. I only ate one burrito and then had a small portion as a burrito bowl. It was so good! This is again kind of a non-recipe. You can vary how much of the ingredients you include based on how many burritos you want to use. Warm Cheesy Chicken Wraps

Cheesy chicken wraps with a special ingredient! I grew up eating pimento cheese sandwiches from time to time. It was often Price's Pimento Cheese on white bread. I always enjoyed it. This takes a classic (pimento cheese) and elevates it into something new and even more delicious. By heating the wrap, the pimento cheese gets all ooey, gooey and warm. That combined with shredded chicken, sauteed red onions and spinach, makes this wrap something special. So, let's get to it! Cheesy Chicken Wraps Ingredients: Flour tortillas (I used 3 soft taco sized) 1 cup of shredded chicken Container of pimento cheese or use homemade half a bag of fresh spinach, torn (mine was a 6oz bag) ½ a red onion, thinly sliced 2 tablespoons of butter Heat a medium sized skillet over medium heat. Buffalo Chicken Dip

This is an amazing appetizer recipe! If you like buffalo wings, I can almost guarantee you'll love this dip. I've made it many times to take to gatherings, and it's always very popular. Buffalo Chicken Wing Dip Ingredients: 2 packages of cream cheese, softened 3/4 cup of hot sauce (I use buffalo sauce) 1 cup of ranch dressing 2 cups of diced, cooked chicken 1 cup shredded cheddar cheese Preheat oven to 350 degrees. Stir together cream cheese and hot sauce until well blended. It's helpful if you microwave the cream cheese a bit to make it easy to incorporate the hot sauce. Then mix in ranch dressing, chicken and cheese. Spread into a square or 9x13 baking dish (i've done it both ways). Bake for 30 minutes. Serve with chips and celery sticks. This is sooo good! Enjoy! One Pan Oven Chicken Fajitas

I love fajitas and this is a super simple way to fix them. They are so good! I was very impressed with how good they turned out and we'll be making them often. These would be great for meal prep as well. One Pan Oven Chicken Fajitas Ingredients: 2 pounds of chicken tenders 2 bell peppers, sliced into strips (any color will do, I chose green and yellow) 1 1/2 red onion, cut in half and then slice each half into strips 2 tablespoons of olive oil 4 cloves of garlic, minced 1 tablespoon chili powder 3/4 tsp cumin dash of cayenne pepper 1 tsp of mexican oregano 1 tablespoon lime juice salt to taste Preheat your oven to 400 degrees and place a large sheet pan in the oven to also be heating up while the oven is preheating. In a gallon sized ziploc bag, add chicken, peppers and onions. Next add the remaining ingredients. Seal the bag and squish it around, mixing all ingredients together well. Slow Cooker Chicken Burrito Bowls

Need a quick, easy and delicious meal? This is it! It cooks in the slow cooker and makes enough for leftovers. This would be great to take for lunch and you could even meal prep with this and portion out in individual containers. This stuff is so good! Let's get started! Slow Cooker Burrito Bowls Ingredients: 3 pounds of boneless, skinless chicken breasts (I sometimes use tenders as well) 1 can of black bean (drained and rinsed) 1 can of Rotel 1.5 cups of corn (can use frozen, fresh off the cob or canned) 1 cup of salsa 1 tbsp of jarred jalapenos, diced (you can use more or even leave them out) 6 cloves of garlic, minced 1.5 onions, diced 1 tbsp of chili powder 2 teaspoons of cumin salt and pepper to taste Add ingredients to your slow cooker (I use a 6 quart oval for this). The Best Chicken Salad

I hope that all of you have had a blessed Christmas and New Year! I know many of us start the New Year off with the resolution to eat healthier. I definitely want to be on the path to being healthier and am trying to make better choices along the way. Sometimes that can be hard when things are busy but baby steps help. So hopefully I will have lots of new recipes to post of some yummy goodies that are healthy as well! I feel that chicken salad is a pretty healthy dish. Especially if you are careful to check the ingredients of the mayonnaise. I use Hellmann's Olive Oil mayonnaise and really enjoy it. Chicken salad is a favorite of mine, but I usually make the same recipe. Chicken, mayo, dill, celery, nuts, etc. Sometimes I add grapes to it as well. However, this time I tried something a bit different. I added relish and hard boiled eggs. I loved the result! This chicken salad is so good! Lemon Chicken Artichoke Soup

There is a take and bake place in town that has the most amazing lemon chicken artichoke soup. I decided to try to make a copy of it at home. This soup isn’t exactly like the one at the local shop here, but it’s close. This recipe is so good and highly addictive! I encourage you to try it as soon as you can! Lemon Chicken Artichoke Soup Ingredients: ½ stick of butter 1 tbsp oilive oil 5 cloves of garlic, minced 2 yellow onions, diced 2 12oz jars of quartered artichoke hearts in water (drained, rinsed and diced) 2-3 lemons 2-3 cups of cooked chicken breasts, diced 1 tsp of dried oregano 8 cups of reduced sodium chicken broth 2 cups of half & half Salt and pepper to taste In a 5-6 qt. stockpot over medium heat, melt butter and add the olive oil. Chicken Casserole

Can't believe that fall will be here soon! I love fall. The colors of leaves changing, the crisp blue skies, cooler weather and yummy foods that are so nice to enjoy during that time of year. For me, that means more soups, chili's, casseroles, yummy breads and muffins. What are your favorite things about fall? Speaking of casseroles, I am totally addicted to this yummy delicious chicken casserole! It's a great quick dinner for those nights you don't have much time if you keep cooked chicken in your freezer. Having precooked chicken and ground beef is such a help for those nights you need something fast. To me this is pure comfort food. I usually serve it with brown rice and steamed broccoli. It would also be great with mashed potatoes or noodles. Delicious! Dill Pickle Faux-Fried Chicken

I love looking at the Cooking for your Family board over at Babycenter . They have a recipe review thread where everyone reviews the recipes they made. It's a great way to find new ideas. Well, one lady posted that she had made this recipe for Dill Pickle Faux-Fried Chicken which is from A Good Appetite . I was really happy with this recipe! The kids loved it! Definitely something different to do with chicken and a good way to use up that pickle juice. I did the recipe a bit different but not much. For the original recipe, click on the link above. Here's what I did.... Dill Pickle Faux-Fried Chicken 2-4 cups of pickle juice 6 boneless, skinless chicken breasts 4 cups of Pepperidge Farms Herb Seasoned Stuffing mix 1/2 cup of grated Parmesan cheese (you could use more or less if you wanted) 2 eggs Marinate chicken breasts for at least 2 hours (I did all day) in the pickle juice. Jalapeno Chicken Dip

This dip is extremely good and addictive! A friend of mine from MOPS has brought it twice to a Mom's Night Out and it disappears! So easy and so good! I highly recommend you make this soon! I made it the other night and served it with Triscuits (fire roasted tomato flavor). So yummy! Jalapeno Chicken Dip 2 8oz packages of cream cheese 1 can of cream of chicken soup 2 cups of cooked diced chicken (could use canned) shredded cheese (I used mexican style) jalapeno slices (jarred) In a sauce pot over medium heat, combine cream cheese and soup until creamy. Then add chicken and heat through. In a baking dish (I used an 8x8 dish), pour cream cheese mixture in and top with cheese. Bake at 350 degrees until cheese is nice and melted. Then remove from oven and top with sliced jalapeno peppers. Serve with crackers and/or chips and enjoy! I'm all for making things healthier and lower in fat. Fried Chicken Breasts with Roasted Red Potatoes and Peppers

This was a very yummy dinner! I didn't use a recipe for the chicken but will tell you round about what I did. Sorry for no exact recipe. I got a package of boneless skinless chicken breasts at Kroger and asked them to butterfly them (only separated completely). I hate touching raw chicken so I was thrilled that they would cut the chicken for me! I rinsed the breasts and then put the between pieces of wax paper and pounded them a little thinner. Then patted them dry with paper towels. In a bowl I put about 2 1/2 cups of flour and sprinkled in some italian seasoning, season salt, salt, and pepper. I didn't measure any of these just eyeballed it. Mix well. In another bowl, I pour in about 1- 1 1/2 cups of buttermilk. Then added about 1/4-1/2 cup of buffalo sauce. I first dipped the chicken in the buttermilk/buffalo sauce and then in the flour mixture. In a medium nonstick skillet I had about 1/4-1/2 inch of oil heating. Time has certainly gotten away from me this month. My intentions were to blog. But every week at least one person has been sick. Nothing too bad thankfully but just enough when you add in other things that I have not been able to blog like I would have liked. So I am sorry I have been missing. Buffalo Chicken Wing Dip

Friday night was our Wizards of Waverly Place House Party. We had a great turnout! 16 kids and 8 adults (three adults didn't stay). Princess enjoyed having her girlfriends over and Rocket boy had a couple of friends there too. I didn't want him to be left out. The kids had fun and there were lots of yummy munchies. I made Chicken Wing Dip (more for the adults than the kids because it is spicy). It's so yummy and everyone will love it. Chicken Noodle Soup

I know it's summer but it hasn't been as hot here and I was wanting chicken noodle soup. My tummy hasn't felt great today. Not sure if it was something I ate or a virus. And one of the things I like to eat when my tummy doesn't feel as good (once I feel like eating anyway) is potatoes diced and boiled in chicken broth. So I thought why not chicken noodle soup! I decided to use my crockpot because I like to make a large amount at a time. That also helped not heat the house up so I can enjoy soup. My favorite noodles to use in chicken noodle soup is the real homemade dried noodles. I found these at Kroger. They're a bit more expensive so we don't eat them often. When I make this soup, I've never used a recipe. So amounts are not exact and can be played with depending on your liking. Cheesy Hashbrown Casserole

I love hash brown casserole. It's crispy on the outside and then there's that yummy cheesy goodness inside. Years ago I tried a recipe and the sour cream was just overwhelming to me. I like sour cream but it was most of what I could taste. So I never tried to make it again. Then I was at church one Wednesday night and they had hashbrown casserole. It was sooo good! And no sour cream taste. So I got the recipe and made it tonight. Absolutely perfect! It was hard to stop eating this one! I also made chicken tenders (just marinated in italian dressing, then seared and baked), green beans and per my daughter's request- cream style corn. It was a yummy meal!
