Spinach, Onion and Mushroom Quiche


This is my favorite quiche. I got the recipe from my good friend, Wendy. It's a basic recipe where you can decide what you want to add to it. It calls for 1 cup of meat and 1 cup of veggies but I use sauteed mushrooms, sauteed onions and spinach (I use frozen, thawed in the microwave and squeeze all liquid out of the spinach). I use whatever amount of each I like. I probably sauteed up about 8oz of mushrooms, 2 small onions and used a handful of spinach. This is so yummy. Even the kids love it!


Basic Quiche
3 eggs
1 can of evaporated milk
1 cup of meat
1 cup of veggies
8oz of cheese
1 tsp of mrs dash
1 pie crust (I haven't made homemade crust yet, so I use frozen. I do find that with frozen shells, you're going to get some overflow on this so use an old cookie sheet covered with a bit of foil)

Preheat oven to 350 degrees. Whisk together eggs, milk and Mrs. Dash. Then add in your ingredients of choice and cheese. Mix well. Pour into pie shell and bake for about 1 hour. My top got a little dark this time because of a phone call. But your top should be golden brown. Enjoy!

I haven't made a quiche before, either, but I want to try this one. I love them, but they look sort of hard to make. This one sounds pretty straightforward and delish! :) Stopping by from Jen's party. :)

There is nothing wrong with buying your pie crust... except that homemade is cheaper and better tasting!

But really, if it means you can get a homecooked meal on the table for your family that is tasty, healthy, and adds variety, who cares if its a "botten" crust?!

I love the "formula" for quiches. It is so easy to customize.

One thing to remember though is that each new variation NEEDS its own name. If I name it, my family thinks its a wonderful new creation instead of a mutation of a basic recipe. When I use shredded zucchini and carrot with crumbled bacon and swiss, I call it Confetti Quiche. When I use chicken, broccoli and mushroom, it is Divan Quiche. Anything with spinach or other greens (which I sneak in often) is a Florentine Quiche. Onion, sausage and potato is Farmer Quiche. Ground beef, onion, cheddar and tomato is Cheeseburger Quiche.

You get the idea - Name it and they will devour it!

This is my fool-proof recipe for pie crust, made with ingredients you always have on hand.(I even use it for a potpie by pressing the dough onto waxed paper and putting on top of dish)

1 1/2 c. flour
1 tsp. salt
2 tsp sugar
2 T. milk
1/2 c. oil
Stir together and press on bottom of pie plate.

That's it! Then continue with your quiche recipe.This is so easy and cheap!

I don't know about you but I really enjoy ranch dressing. The stuff in the bottle is okay, but if you look at the ingredients it contains some not so good stuff like MSG and added sugar. Princess came home with an assignment to to a Civil War project. There were several options but she and I always gravitate to the ones that involve cooking. So we chose to make a recipe from the Civil War time to share with her class. Can I just say how grateful I am for the internet when it comes to these school projects?
