Using what's in the pantry: Canned Pumpkin



I have had a big can of pumpkin in the cabinet for while now. So I thought about pumpkin muffins, but then decided why not make Pumpkin Pie? So I did! I made a mix for two pies but decided to only bake one right then. I was going to bake the other one later. This turned out to be a very good thing and I will explain why.

Since my daughter has been begging to help me in the kitchen I decided to let her help. Then the boys kept coming in and out of the kitchen and I was a bit stressed. The kitchen is kind of my zone and the more people in an out of it while I'm cooking just stresses me out.

We did finally get the one pie in the oven. However, while it was baking I remembered I never put the sugar in it! When it was done I tasted it and it's amazing what that sugar does for pie! LOL

I was really disappointed but then added sugar to the next batch of mix and baked it up Tuesday night. It turned out very yummy!

I'm trying to get over being stressed out so easily in the kitchen because I want the kids to have memories of us in the kitchen together. They'll definitely remember this one. LOL

Sorry for the hole in the pie in the middle. It's from where I checked to see if it was done.

Libby's® Famous Pumpkin Pie
* 1 (9 inch) unbaked deep dish pie crust
* 3/4 cup white sugar
* 1 teaspoon ground cinnamon
* 1/2 teaspoon salt
* 1/2 teaspoon ground ginger
* 1/4 teaspoon ground cloves
* 2 eggs
* 1 (15 ounce) can LIBBY'S® 100% Pure Pumpkin
* 1 (12 fluid ounce) can NESTLE® CARNATION® Evaporated Milk

1. Preheat oven to 425 F.
2. Combine sugar, salt, cinnamon, ginger and cloves in small bowl. Beat eggs lightly in large bowl. Stir in pumpkin and sugar-spice mixture. Gradually stir in evaporated milk. Pour into pie shell.
3. Bake for 15 minutes. Reduce temperature to 350 F.; bake for 40 to 50 minutes or until knife inserted near center comes out clean. Cool on wire rack for 2 hours. Serve immediately or refrigerate. (Do not freeze as this will cause the crust to separate from the filling.)

Looks delicious. I totally know about how stressful it can be to have kids in the kitchen, but it can also be rewarding too. Hang in there.
How disheartening to do all the work and then have forgotten the sugar. That kind of thing just kills me.

I'm glad that the second one came out well though!

I have two cans of pumpkin in my pantry but it just doesn't seem right to eat it when it isn't thanksgiving! I think you may have inspired to step out of the seasonal box because pumpkin pie is so good!

It was! I was surprised how it made me feel that day. That's one of the biggest mistakes I've ever made and it even made me doubt my cooking ability. It was very discouraging but when the other pie turned out well It helped me realize it was just a mistake.

It was nice to enjoy it without it being the holidays. It's funny how we keep some meals/dishes in a box for a certain time of the year when they're really tasty! So we need to enjoy them more! :)

I keep my staples in large Tupperware containers; even the salt.
One time my brother was making snickerdoodles at my house (we like to cook together). He made the dough right but made a mistake at the end. When he made the cinnamon sugar blend to roll the dough balls in, he accidentally used salt instead of sugar. Man o man, were those salty!

I love this recipe - it is a seasonal favorite in our house! And yes having it out of season is wonderful! I'm 8 months pregnant and I was craving chinese food and pumpkin pie about a month ago... sounds crazy but WOW was it good!!!

I hear ya on the kid thing too! My boys (age 3 and 20 mo) sit at the kitchen counter and help mama count scoops of flour, sugar, spices, etc when I bake... then I let them have snitches of dough and filling along the way...

But they sit on the OTHER side of the island and are GATED off from my side! :) either that or my wonderful hubby humors my baking and takes them out for a walk!

That reminds me of in a Coal Miner's Daughter where she used salt instead of sugar in a chocolate pie.

I bet those were very salty cookies!

We all have our moments in the kitchen when we doubt our cooking/baking ability. I have those moments at least one time a month. I try to make something specifically for my blog and it fails in a huge way. I get frustrated but realize that it's not worth getting frustrated. Cooking/baking should be fun so I try to just let it roll off my back:)

Now your pumpkin pie looks delicious and has me starting to dream of fall. I can't wait to start wearing hoodie sweatshirts and watching the leaves turn color...:)
Good for you using what was in your pantry. And Double GOOD for not waiting until the holidays. I feel so sorry for recipes that are relegated to certain holidays.

A Civil War Recipe..... Oatmeal Pie

Princess came home with an assignment to to a Civil War project. There were several options but she and I always gravitate to the ones that involve cooking. So we chose to make a recipe from the Civil War time to share with her class. Can I just say how grateful I am for the internet when it comes to these school projects? We looked online and found many different recipes. I wanted one that used ingredients I already had on hand and hopefully one that would be a bit tasty. I finally found a forum where people were sharing Civil War recipes and someone had shared one for Oatmeal Pie from Charleston, South Carolina.
