Using my crockpot: cooking beans and a coleslaw recipe

One of my favorite meals is at a place called Huck Finn's in Pigeon Forge, TN. I love the "vittles" they bring out to you, served family style all you can eat. White beans, cole slaw, hush puppies, pickles and onions. I love their catfish as well. I haven't been there in a long time.

Yesterday I decided to make white beans, coleslaw and corn cakes (instead of hushpuppies). I served it with dill pickles and sliced tomatoes. It was a frugal yet yummy meal!

I hadn't cooked beans in the crockpot before but I looked a bit online and it seemed easy enough.

This is what I did.


Crockpot white beans

2 16 oz bags of white beans
water
bacon paste (from Soupbase.com)
1 packet of onion soup mix (I only used 1/2 and it definitely could have used a whole pack if not more)
salt

Look through beans and discard any stones, broken beans, etc. Rinse beans and place in crockpot. Add water (go about 2-3 inches above beans), bacon paste (I used about 2 tsp, you could use more or use some ham) and onion soup mix. I let this cook on low at first. Then decided to turn it to high because I didn't get it started til later than I had meant and wanted to speed up the cook time. I think it's good to get it up to temp so I would start out on high and either cook it on high or switch over to low after 3 hours or so. I added salt near the end after tasting to see where it was on seasoning.

I had never made homemade coleslaw before so I looked on Allrecipes.com and found a recipe for coleslaw.


Mom's Coleslaw
INGREDIENTS

* 1 small head cabbage, shredded
* 3 medium carrots, shredded
* 1 cup mayonnaise
* 1/3 cup sugar
* 1/4 cup cider vinegar

DIRECTIONS

1. In a large bowl, combine cabbage and carrots. In a small bowl, combine the mayonnaise, sugar and vinegar. Pour over cabbage mixture and toss to coat. Serve with a slotted spoon.

It turned out really yummy. I did add a tablespoon or so of ranch dressing to mine and some salt and pepper.

All in all a very good meal. Not exactly like Huck Finn's (I'd rather have the hushpuppies but have never made them so didn't try that yet) but a close substitute.

I make beans in the crockpot a lot. Sometimes I do them overnight, its just so easy.

I don't know about you but I really enjoy ranch dressing. The stuff in the bottle is okay, but if you look at the ingredients it contains some not so good stuff like MSG and added sugar. Princess came home with an assignment to to a Civil War project. There were several options but she and I always gravitate to the ones that involve cooking. So we chose to make a recipe from the Civil War time to share with her class. Can I just say how grateful I am for the internet when it comes to these school projects? We looked online and found many different recipes. I wanted one that used ingredients I already had on hand and hopefully one that would be a bit tasty. I finally found a forum where people were sharing Civil War recipes and someone had shared one for Oatmeal Pie from Charleston, South Carolina. Apparently, during the Civil War, pecans were in short supply. So oatmeal was subbed for pecans to make a sort of mock pecan pie. This recipe is very tasty and really easy. It does remind me of a pecan pie, but at the same time a little reminiscent of an apple crisp because of the oatmeal and the cinnamon. Very delicious! I'm hoping her class really enjoys it.
