The gift of baked goods


I have a wonderful friend who watched my 3 year old so that DH and I could spend some time together yesterday. We ran some errands and took advantage of the $4.99 breakfast buffet at Shoney's. We really just enjoyed being out together alone. It's been hard for us to do that much. It's something that we need every now and then.

We were so grateful that I wanted to do something to thank her. So I baked her a batch of blondies. These things are absolutely addictive. Especially when they are warm from the oven. I got this recipe from another friend of mine.

Blondies
1 cup of flour
1/2 t baking powder
1/2 t baking soda
1/2 tsp salt
1/3 c butter, softened
1 c brown sugar
1 egg
1 t vanilla
1/2 c walnuts
1/2 pkg of mini chocolate chips

I just mix everything but the nuts and chocolate chips together. When you get it mixed well, then add the nuts and chips. Bake at 350 for about 25 minutes in an 8x8 greased pan. These are so wonderful!

I think baking or cooking something for someone is a wonderful way to express your gratitude. Everyone loves something yummy. :)

Thanks so much for stopping by! I love this recipe. It is not the healiest of course so I try not to make it often. But it disappears quickly when I do make it!

Salt-Free Ranch Dressing Mix

I don't know about you but I really enjoy ranch dressing. The stuff in the bottle is okay, but if you look at the ingredients it contains some not so good stuff like MSG and added sugar. It also has a lot of added sodium. I'm trying to watch my sodium so I decided to make a salt-free ranch mix, then I can control the salt whenever I make the dressing or add it to a recipe. It's super easy to make your own ranch mix. If you make a batch of this up, you can have it already on hand to make ranch dressing or add it into other recipes. Let's get started! A Civil War Recipe..... Oatmeal Pie

Princess came home with an assignment to to a Civil War project. There were several options but she and I always gravitate to the ones that involve cooking. So we chose to make a recipe from the Civil War time to share with her class. Can I just say how grateful I am for the internet when it comes to these school projects? We looked online and found many different recipes. I wanted one that used ingredients I already had on hand and hopefully one that would be a bit tasty. I finally found a forum where people were sharing Civil War recipes and someone had shared one for Oatmeal Pie from Charleston, South Carolina. Apparently, during the Civil War, pecans were in short supply. So oatmeal was subbed for pecans to make a sort of mock pecan pie. This recipe is very tasty and really easy.
