Breakfast to go and much cheaper than McDonald's!



Yesterday, a few friends and I got together like we do pretty much every Thursday morning when school is in. We fellowship and everyone brings something to share. Yesterday I decided to bring Bacon, Egg and Cheese Bagels. And you'll be amazed at how much I spent. First lets get to the recipe.



Baked egg squares

12 eggs
1/2 cup of water
salt and pepper to taste

Preheat oven to 325 degrees. Grease baking sheet liberally with butter (I used a 15x10x1 heavy sheet pan). In a bowl, whisk eggs, water, salt and pepper together. Then pour into buttered sheet pan. I have to add in here that I mixed the eggs the night before so that I just had to pour them in the pan in the morning. Just store in the fridge till you're ready to bake. Then bake until set. Mine cooked for about 20 minutes. Slice into squares to use on breakfast sandwiches. Yields: 12 squares
The eggs did have a couple bubble up spots. I just poked them down with a fork and that worked just fine.

I made 6 sandwiches. So here's what I did.

Bacon, Egg and Cheese Bagels
6 bagels (I toasted these in the oven for just a couple of minutes. Mine had been frozen so I wanted to dry out some of the moisture)
6 slices of cheese
6 egg squares
12 slices of bacon, cooked (I used the precooked stuff and microwaved it to get it crispy)

I assembled each sandwich, wrapped in foil and baked in the oven for a few minutes until the cheese was nice and melty. These were yummy sandwiches!

Now, for the amazing part.....
Cost breakdown:
6 eggs .25 (only used 6 squares of egg)
6 slices of cheese .56 (bought on sale for $1.25 Kraft singles, 16 slice package)
Thomas bagels .99 (marked down, short sale date and put in the freezer)
Bacon 2.00 (bought on sale at kroger, Tyson B1G1F used entire package)
Total for 6 sandwiches $3.80 ($4.04 if you count the 6 leftover egg squares to use as needed)

Total for 6 Bacon, Egg and Cheese Bagels at McDonald's: 6 x $2.50= $15.00
I'm going to estimate $2.50 per sandwich. I haven't bought one in ages but I'm sure they're at least that.

That's a savings of about $11!!

I do a version of this with biscuits, and my boys love them. I make them with bacon, eggs and cheese and freeze them. They take about a minute each to nuke in the microwave.
Your method of making eggs is awesome, and one I'll surely try!

I love the baked egg squares! Wonder if you could freeze them for future use? Or maybe even make up whole sandwiches & freeze them to grab as needed?

This is fantastic. My daughter loves eating eggs before school (she's like me in that department, crave the protein in the AM). I will have to have her try these, she will like them, maybe on flat bread or that new think sliced bread since she's trying to watch her carbs. Thanks for the great idea.

A Civil War Recipe..... Oatmeal Pie

Princess came home with an assignment to to a Civil War project. There were several options but she and I always gravitate to the ones that involve cooking. So we chose to make a recipe from the Civil War time to share with her class. Can I just say how grateful I am for the internet when it comes to these school projects?
