Chicken tortilla Soup and an apology

Time has certainly gotten away from me this month. My intentions were to blog. But every week at least one person has been sick. Nothing too bad thankfully but just enough when you add in other things that I have not been able to blog like I would have liked. So I am sorry I have been missing. I have a very yummy recipe to offer up to help make up for it. :) I had some friends over the other night and my intentions were to make a salad and dessert. However, the weather has started to cool down this week and I wanted to take advantage of that. I wanted to make soup instead. So I decided on Chicken Tortilla Soup in the crockpot. It was the first time I've made it and it was delicious! Chicken Tortilla Soup 2 onions, diced 5 cloves of garlic, minced (I used my garlic press) 2 tbsp of oil (I used canola) 4 tsp chili powder 2 tsp cumin 2 28oz cans of crushed tomatoes 2 cans of chicken broth 2 1/2 cups of water 1 16 oz bag of frozen corn 1 4oz can of green chiles 1 can of mild rotel (I u...

Breakfast to go and much cheaper than McDonald's!

Yesterday, a few friends and I got together like we do pretty much every Thursday morning when school is in. We fellowship and everyone brings something to share. Yesterday I decided to bring Bacon, Egg and Cheese Bagels. And you'll be amazed at how much I spent. First lets get to the recipe. Baked egg squares 12 eggs 1/2 cup of water salt and pepper to taste Preheat oven to 325 degrees. Grease baking sheet liberally with butter (I used a 15x10x1 heavy sheet pan). In a bowl, whisk eggs, water, salt and pepper together. Then pour into buttered sheet pan. I have to add in here that I mixed the eggs the night before so that I just had to pour them in the pan in the morning. Just store in the fridge till you're ready to bake. Then bake until set. Mine cooked for about 20 minutes. Slice into squares to use on breakfast sandwiches. Yields: 12 squares The eggs did have a couple bubble up spots. I just poked them down with a fork and that worked just fine. I made 6 sandwiches. So here...

Apple Crisp

I had some apples that weren't quite good enough to eat raw so decided to make an apple crisp. I have to say, I ended up messing this one up a bit. I had a friend over for lunch and was trying to hurry so that it would be done before we had to go pick our kids up from school. So I accidentally left out the brown sugar. I realized this when I pulled it out of the oven. So I just mixed in the brown sugar and baked it a little longer. It was good after that. I think this would have really been good if I had did it right the first time. Apparently I just can't bake under pressure (see my pumpkin pie incident ). LOL I only made half a recipe and agree with some reviews that the flour needs to be cut down. I had never made apple crisp before and felt overall this was a pretty good recipe. Spinach, Onion and Mushroom Quiche

This is my favorite quiche. I got the recipe from my good friend, Wendy. It's a basic recipe where you can decide what you want to add to it. It calls for 1 cup of meat and 1 cup of veggies but I use sauteed mushrooms, sauteed onions and spinach (I use frozen, thawed in the microwave and squeeze all liquid out of the spinach). I use whatever amount of each I like. I probably sauteed up about 8oz of mushrooms, 2 small onions and used a handful of spinach. This is so yummy. Even the kids love it! Basic Quiche 3 eggs 1 can of evaporated milk 1 cup of meat 1 cup of veggies 8oz of cheese 1 tsp of mrs dash 1 pie crust (I haven't made homemade crust yet, so I use frozen. I do find that with frozen shells, you're going to get some overflow on this so use an old cookie sheet covered with a bit of foil) Preheat oven to 350 degrees. Whisk together eggs, milk and Mrs. Dash. Then add in your ingredients of choice and cheese. Mix well. Pour into pie shell and bake for about 1 hour. My to...
