I love these chocolaty, peanut buttery no bake cookies. You can't get much easier than these and so yummy. I have tried a few different recipes and this is my favorite. This one always sets up for me. I usually just pour it all out on a cookie sheet that I've covered with wax paper. Then break it apart into pieces. But for you guys, I made a few cookies for a nice picture. :)
No Bake Cookies
2 cups sugar
4 tbsp of cocoa (I usually make these heaping because you can't have too much chocolate)
1 stick of butter (this time I used smart balance 50/50 sticks and they worked great!)
1 tbsp of vanilla (I always leave this out. You can add if you like but vanilla is expensive and I'd rather save it for something I can really taste it in. I've never noticed a difference with/without it)
3 cups of oatmeal (I use 1-minute quick oats)
1/2 cup of milk
1 cup of peanut butter (I like to use crunchy sometimes)
In a heavy saucepan, bring to a boil the sugar, cocoa, butter and milk. Let boil for 1 minute. Then add the peanut butter, vanilla and oatmeal. On a sheet of waxed paper, drop mixture with an ice cream scoop or spoon into individual cookies. Let cool and they will firm up.
