Chicken tortilla Soup and an apology


Time has certainly gotten away from me this month. My intentions were to blog. But every week at least one person has been sick. Nothing too bad thankfully but just enough when you add in other things that I have not been able to blog like I would have liked. So I am sorry I have been missing. I have a very yummy recipe to offer up to help make up for it. :)

I had some friends over the other night and my intentions were to make a salad and dessert. However, the weather has started to cool down this week and I wanted to take advantage of that. I wanted to make soup instead. So I decided on Chicken Tortilla Soup in the crockpot. It was the first time I've made it and it was delicious!

Chicken Tortilla Soup
2 onions, diced
5 cloves of garlic, minced (I used my garlic press)
2 tbsp of oil (I used canola)
4 tsp chili powder
2 tsp cumin
2 28oz cans of crushed tomatoes
2 cans of chicken broth
2 1/2 cups of water
1 16 oz bag of frozen corn
1 4oz can of green chiles
1 can of mild rotel (I used Kroger brand)
2 15oz cans of black beans (rinsed and drained)
3-4 cups of chicken cooked and diced or shredded

In a medium stock pot, heat oil over medium heat. Saute onion until soft and add the garlic and saute for a couple of minutes longer. Stir in chili powder, cumin, chicken broth and water. Let it heat almost to a simmer and then pour into the crockpot. Add tomatoes, corn, chiles, rotel, black beans and chicken. I cooked for about 6 hours on high. Everything is pretty much done so you can cook it how you like. You could cook it all day on low if you would like. Add tortilla chips, avocado, cheese, etc. Whatever toppings you want.

This was so good. I will have to make it regularly because I absolutely loved it. And very hearty with the beans and chicken. This soup definitely Works For Me!

GREAT!!! recipe. I love all the garlic in this recipe, but I would not use as much cumin. Maybe 1/2 the amount. Don't you just love rotel, yes I like the mild the hot is to hot for me. THANKS!!! for the YUMMY!!! recipe. Geri

I don't know about you but I really enjoy ranch dressing. The stuff in the bottle is okay, but if you look at the ingredients it contains some not so good stuff like MSG and added sugar. A Civil War Recipe..... Oatmeal Pie

Princess came home with an assignment to to a Civil War project. There were several options but she and I always gravitate to the ones that involve cooking. So we chose to make a recipe from the Civil War time to share with her class. Can I just say how grateful I am for the internet when it comes to these school projects?
