Cheesy Hashbrown Casserole



I love hash brown casserole. It's crispy on the outside and then there's that yummy cheesy goodness inside. Years ago I tried a recipe and the sour cream was just overwhelming to me. I like sour cream but it was most of what I could taste. So I never tried to make it again.

Then I was at church one Wednesday night and they had hashbrown casserole. It was sooo good! And no sour cream taste. So I got the recipe and made it tonight. Absolutely perfect! It was hard to stop eating this one!


I also made chicken tenders (just marinated in italian dressing, then seared and baked), green beans and per my daughter's request- cream style corn. It was a yummy meal!


Hashbrown Casserole
2 cups of cheese (I used cheddar)
1 10 3/4oz can of cream of chicken soup
1 cup of sour cream (I only used a little over a 1/2 cup)
1/2 cup onion (diced)
1/4 cup of butter
1/4 tsp salt
1/4 tsp pepper
1 32ox bag of shredded hashbrown potatoes (it seems most bags are 30oz now and that was what I used)

Preheat oven to 350 degrees. Grease a 9x13 baking pan. In a large bowl, mix together the 1st 7 ingredients. Then fold in the potatoes. Pour in to your pan. Bake for 1 hour.

So simple yet so yummy! I also let the hashbrowns thaw on the counter for a bit to make mixing easy.

I have made this casserole many times. In fact, it is one of the things I make ahead for the freezer. Mix the sauce ingredients. Whack the bag of hash browns to break them up first, then mix into sauce. Either dump in gallon zipper bag or in prepared pan, wrap and freeze. (I use a method were I double bag and slip a card with name, date and directions for the item between the 2 bags. The outside bag is always reused.) When I want to serve the casserole, I just put it in the fridge the night before. It doesn't thaw all the way but helps it cook more evenly.

I've always heard of the coca cola cake, but have never made it! Looks simple...and it's chocolate, so it MUST be delish! I'm going to have to try it one of these days (when it's not 90 degrees) ;-)

I made this recipe for a pitch in breakfast at work. I made 3 batches - 1 was with the chunky cut hashbrowns (cause I bought the wrong type in my hurry at the grocery) - There was only enough leftover to have a taste for my lunch. For my cheeses I used both a mild style and an extra sharp (white) type cheese which gives the dish an added aspect of flavor.

I don't know about you but I really enjoy ranch dressing. The stuff in the bottle is okay, but if you look at the ingredients it contains some not so good stuff like MSG and added sugar. A Civil War Recipe..... Oatmeal Pie

Princess came home with an assignment to to a Civil War project. There were several options but she and I always gravitate to the ones that involve cooking. So we chose to make a recipe from the Civil War time to share with her class. Can I just say how grateful I am for the internet when it comes to these school projects? We looked online and found many different recipes. I wanted one that used ingredients I already had on hand and hopefully one that would be a bit tasty. I finally found a forum where people were sharing Civil War recipes and someone had shared one for Oatmeal Pie from Charleston, South Carolina.
