Love my crockpot!

I love my crockpot! I have had a crockpot for years and never really used it.That is until I tasted a boston butt pork roast that my friend cooked in hers. It was so tender and yummy! I couldn't believe that's what happened in a crockpot! So I decided I was going to dig out my crockpot and make one too. I made a boston butt pork roast in mine and it was really good. I do my roasts in there if I can. I never want to put another roast in the oven!

Last night I cooked a pork loin in there (on sale for $1.49/lb!). It turned out so yummy and just so tender. It was delicious!

And one of the best parts, it didn't heat up my house! Which is wonderful during the summer. I got my electric bill yesterday and was shocked how much it jumped from last month's. It was way more than we had planned for so any savings in electricity is very good!

I have to admit, I haven't tried much other than roasting meats in it. I'd like to try some other recipes in my crockpot since I now love it so much! What are your favorite crockpot recipes? I'd love to have new ones to try!

Happy eating!
God bless,
Amanda

H Amanda, thank you so much for stopping by my blog :)

I love my crockpot too and if you're looking for great recipes, won't you stop by my blog on Thursdays, I do a Slow Cooking Thursday feature and have a bunch of ladies sharing recipes, I think you'll find a lot of good stuff there :)
I usually braise on the stovetop. Your crockpot adulation makes me curious. You're not the first person I've heard praising crockpot braising. I think I need to get one!
Sandra,
Thanks! I did stop by and I always check your site regularly. Love your blogs!

Suzanne,
You definitely should try it! It's awesome and save from heating up the kitchen so much.

God bless,
Amanda

I have no idea if you will even get this as I am commenting on it so long after it was posted...but, I have an AWESOME crock pot recipe or two. :)

The simplest is a chicken recipe...take a whole chicken and rinse it really well. season with garlic powder and pepper and salt. Pleace cavity down in the crock. Pour over a jar of any red- based bbq sauce...there is one here in Louisiana called "Southern brand", it is awesome for this.

Anyway, pour it on your chicken..thin slice some onions and pay it on in a layer, sprinkle in a couple palm-fulls of brown sugar, and add just a tad of apple cider vinegar. Place the lid on tight and cook on low for about 8-9 hours... Serve over biscuits...it makes a red-sauce based, savory sweet BBQ that is just HEAVENLY.

My favorite is yankee potroast. Season a chuck roast with good marbling with salt and pepper and brown on all sides in a skillet with oil.
In your crock, pour in a can of cream of mushroom soup, a whole thinly sliced onion, minced fresh garlic, two cans of whole new potatoes, reserving the liquid, two cans of sliced carrots with the liquid, a can of drained mushrooms.

Mix this well with your crock on high. Add the roast, and pour over the liquid from the potatoes to cover..if you need more liquid, add another can or two of water, but depending n the size of your roast and crock, you may not use all the liquid.

Cover tightly and cook on high for an hour or two, then turn to low and cook for about 8 hours until the roast falls apart. Serve over rice with rolls.

**I like to start this one at night, about two hours before bed. Then, it is done and you can keep it on low/ warm until lunch and dinner the next day.. I always served this on Sundays after church, and it was always ready just in time when we came in the door. :)

Salt-Free Ranch Dressing Mix

I don't know about you but I really enjoy ranch dressing. The stuff in the bottle is okay, but if you look at the ingredients it contains some not so good stuff like MSG and added sugar. It also has a lot of added sodium. I'm trying to watch my sodium so I decided to make a salt-free ranch mix, then I can control the salt whenever I make the dressing or add it to a recipe. It's super easy to make your own ranch mix. If you make a batch of this up, you can have it already on hand to make ranch dressing or add it into other recipes. Let's get started! Salt-free Ranch Dressing Mix Ingredients: 4 Tbsp of dried parsley 4 tsp of dried dill 4 tsp of onion powder 4 tsp of minced dried onion 2 tsp of garlic powder 1 tsp of ground black pepper Combine the spices in a bowl and from here you can process them for a bit in a mini food processor to mix well and make some of the parsley smaller or you can use a coffee grinder as a spice grinder. Then place in a contai

A Civil War Recipe..... Oatmeal Pie

Princess came home with an assignment to to a Civil War project. There were several options but she and I always gravitate to the ones that involve cooking. So we chose to make a recipe from the Civil War time to share with her class. Can I just say how grateful I am for the internet when it comes to these school projects? We looked online and found many different recipes. I wanted one that used ingredients I already had on hand and hopefully one that would be a bit tasty. I finally found a forum where people were sharing Civil War recipes and someone had shared one for Oatmeal Pie from Charleston, South Carolina. Apparently, during the Civil War, pecans were in short supply. So oatmeal was subbed for pecans to make a sort of mock pecan pie. This recipe is very tasty and really easy. It does remind me of a pecan pie, but at the same time a little reminiscent of an apple crisp because of the oatmeal and the cinnamon. Very delicious! I'm hoping her class really enjoys it.
