Copycat Taco Bell Crunchy Taco Supreme

Sometimes I really get to craving a Taco Bell crunchy taco supreme. I know they aren't really good for me, especially since we have been trying to watch our sodium more. They just taste so good though that every once in awhile I give in and have just one. So I decided to try to make some at home and try to get close to the Taco Bell taste. Well this really hit the spot! It tastes a lot like the real deal. I don't use much salt so I will encourage you to salt to your tastes. If these had been more salty they would have been almost the same. I hope you enjoy them as much we did! Copycat Taco Bell Crunchy Taco Supreme Ingredients: 2 lbs ground beef 8oz can of tomato sauce 8oz of water (use the tomato sauce can to measure) 2 tsp garlic powder 2 tsp chili powder (I used Penzey's Chili 3000 . It is so good!) 2 tsp onion powder 1 tsp red pepper flakes salt to taste crunchy taco shells Taco toppings: shredded lettuce, shredded cheese (I used cheddar), diced to...

Smoked Gouda Stuffed Meatloaf

Do you buy ground beef or have your meat gound up fresh? I love to have ours ground up fresh. It's the only way I buy it. I usually use sirloin tip or london broil, and have used a couple of other cuts before too. I just watch for it to go on sale. Sirloin tip was on sale this time and I decided to make meatloaf again. I wanted something different for this one, so I thought why not stuff it with smoked gouda cheese! This was really good. Hope you enjoy it as much as we did! Smoked Gouda Stuffed Meatloaf 2 tablespoons butter 2 onions, diced 5 cloves of garlic, minced ½ cup of ketchup (I used just a tad less than ½ cup) ¾ cup of breadcrumbs 1 teaspoon of thyme 2 eggs 2 pounds of ground beef 1/3 pound of smoked gouda, cut into sticks (like cheese sticks only smaller) Preheat your oven to 350 degrees. In a sauté pan over medium heat, melt butter and then add the diced onion. Sauté until translucent. Add the minced garlic, allowing it to cook for a minute or two. ...

Veggie Packed Meatloaf

I haven't made meatloaf in forever and thought it would be yummy so I decided to make it. This time to be a bit healthier, I decided to add some veggies to my meatloaf. I really enjoyed the results. I have to warn you here that I am trying to watch our sodium a bit, so if you choose to make this, you can adjust the recipe to add more salt. This is a good way to sneak veggies into kids, you could even puree the veggies if you wanted to before adding them to the meat so they can't be identified. I like to leave them like they are though. Veggie packed Meatloaf 2 tablespoons of butter 1 cup of finely diced onion 1 rib of celery, finely diced 1 carrot, diced finely 3-4 cloves of garlic, minced ½ of an 8oz can of tomato sauce 1 cup of breadcrumbs 2 eggs, large 2 pounds of ground beef ketchup Preheat your over to 350 degrees. In a saute pan over medium heat, melt butter and then add the diced celery, onion and carrot. Saute for 3-5 minutes allowing the veggies ...

Beef Stew from My Irish Table Cookbook

I’m finally getting around to my first recipe from one of the cookbooks I reviewed. I really am sorry it took so long, but life has been pretty hectic lately. My husband and I are both back in school full-time and we have begun homeschooling our oldest. This recipe is from My Irish Table by Cathal Armstrong and David Hagedorn. You can find my review of the cookbook here . Beef Stew Serves 6 Ingredients: 1.5 pounds of beef stew meat cut into 1-inch cubes Kosher Salt and freshly ground pepper 2 tablespoons canola oil 1 yellow onion, diced 4 carrots, peeled and diced 4 celery stalks, diced 8 cloves of garlic, roughly chopped 1 tablespoons all-purpose flour 3 cups of veal demi-glace or store bought beef broth 1 serrano chile, coarsely chopped, with seeds 3 large bay leaves 2 tablespoons chopped fresh thyme leaves 1 tablespoon chopped fresh rosemary leaves Brown the beef : Pat the beef cubes dry on all sides with paper towels and season well with salt and pepper. Easy Slow Cooker Stroganoff

Hi everyone! I didn't remember to take a picture of this but it was sooo good. Easy Slow Cooker Stroganoff 2-3 pounds of beef stew meat (I used part beef stew meat and part stir fry strips that were marked down) 2 cans of cream of mushroom soup 1 packet of onion soup mix 8oz beef broth 1 small jar of sliced mushrooms Place meat in the crockpot. I mixed the soup, soup mix, broth and mushrooms in a bowl and then poured on top of the meat. I am sure you could just dump everything in as well. Cook on high for 4-6 hours or until meat is tender. This was so yummy! It was plenty salty enough and I used the healthy request cream of mushroom soup with reduced sodium. So I wouldn't add any additional salt. Serve over noodles or rice. Delicious!! Bacon Cheddar Burgers

I love watching Man Vs. Food . However, it also can make me very hungry. LOL The other night he was showing hamburgers and boy did they look good! It made me want a good hamburger. So I decided to make some. I didn't measure the seasonings or sauce but this should get you close. Add more or less according to your preference. Bacon Cheddar Burgers 2.5 pounds of ground round 8 slices of bacon, cooked and crumbled 8 oz of sharp cheddar cheese, shredded 1 egg 1-2 tbsp of A1 sauce 1 tsp of season salt Mix all ingredients together and form hamburger patties. Then grill or cook on the stove top until done. These were fantastic! The picture doesn't do them justice at all. It was the tastiest burger I have ever made. I used the bacon that is precooked but made it nice and crispy in the microwave. I cooked these on the stove top because we don't have a grill but these would be fabulous on the grill! This recipe definitely Works for Me ! Happy Eating!

Easy Meatloaf and Fried Cabbage

I decided to use Rocket Boy's Texas plate. :) The best meatloaf recipe I have tried (I haven't tried many yet because I like this one so much) is using Hunt's Seasoned Tomato Sauce for Meatloaf. It always turns out perfect for me. It's super simple and super tasty! I served it with boxed potatoes (ran out of time to do fresh) and fried cabbage (well not really fried but wasn't fully steamed either LOL). Hunt's Meatloaf Recipe 1 can (15.25oz) Hunt's Family Favorites Seasoned Tomato Sauce for Meatloaf 2 pounds of lean ground beef 2 large eggs, beaten 1 cup of quick cooking oats, bread crumbs or crushed crackers (I used half crackers, half oats) Preheat oven 400 F. Combine half of Hunt's Seasoned Tomato Sauce for Meatloaf with the ground beef, eggs, bread crumbs, onions; mix well. Place mixture in loaf pan. Bake uncovered for 1 hour. Remove from oven; drain. Top meatloaf with remaining sauce. Bake an additional 10 minutes. Allow to stand 10 minutes before s...

Pepperjack Roast Beef Sandwiches

On Saturday, I cooked a roast in the slow cooker. No real recipe. Just cut up a bunch of red potatoes and carrots and placed them in the bottom of the crockpot. Placed the roast on top of those and poured in about 2 cups of beef broth. Then salt and peppered the roast. Cooked all day in the slow cooker. Then I removed the roast and veggies and used the liquid to make a gravy. Just heated it in a sauce pan on the stove and added some corn starch that I had combined with a few tablespoons of cold water. Add corn starch mixture when the cooking liquid has come to a boil. It was a large roast and I had leftovers. Only I was in the mood for something with a bit of spice. So I created Open Faced Roast Beef Sandwiches covered with Pepperjack Cheese! It was delicious! Sorry that the picture didn't come out well. It was night out when I made this and I couldn't get good lighting. Open Faced Pepperjack Roast Beef Sandwiches leftover roast leftover gravy sliced sourdough bread sliced pepp...

Beef Pot Roast with Maple Sweet Potatoes & Cider Gravy

This looked so tasty on Cooking During Stolen Moments that I just had to make it. I decided to do it in the crockpot instead. This seemed like a perfect meal to do in the crockpot. You can view the recipe here . Here's what I did to change it to a crockpot meal. I used the chuck roast that I got from Food Lion. I seared both sides and then placed it in the crockpot. I added the cut sweet potatoes on top of the roast and around the sides. In the pan, I added the salt, pepper and some italian seasoning (because I was out of thyme) and the chopped onions to the pan. I sauteed those until tender. I added the broth and apple cider and let that cook for a couple of minutes, making sure to get up all of the bits on the bottom of the pan. Then I poured this on top of the potatoes and roast in the crockpot. I cooked it on high for about 5 hours and then turned it down to low for about 2 more hours. It turned out perfect. I made the sweet potatoes (I started to use a potato masher but then ...

Mini-Burgers or Sliders

These are so cute! I love little burgers like this and what kid doesn't? The direct sales company that I work for had a recipe for these and while I didn't use that recipe (didn't have the ingredients on hand), I made my own version. I wanted mine pretty thin, so I used a very large jelly roll sheet pan. I ended up with 24 burgers. Very yummy! Homemade Sliders 24 ct mini burger buns (mine were made my Lewis Bakeries, I think the same people who do bunny bread. I found them at Kroger) 2.75-3 pounds of ground beef 2 tbsp Worcestershire sauce 1-2tsp season salt (I basically just eye ball this, just do it to your preference) sliced cheese dill pickles mustard whatever other toppings you might want (onions, tomato, mushrooms, etc) Preheat oven to 400 degrees. In a large bowl, mix meat, Worcestershire sauce and season salt together. In a large jelly roll pan, pat out the meat to cover the entire surface. Sprinkle a little extra season salt on top. 'Ohana Night

One of our favorite meals at Disney World last year was 'Ohana. It was at the Polynesian Resort and it was very yummy. We had a wonderful seat right next to the window that night and had a great view of the nightly fireworks. It was really awesome. So we decided to recreate that meal at home. First up we have Terryaki Chicken and steak tips. Now at 'Ohana, they serve everything off these skewers and everything is grilled but we don't have a grill right now. I cooked the chicken in the oven with bottled marinade on it. They don't have terryiaki chicken but I thought since we weren't grilling it would add additional flavor. For the steak tips, I put a little oil in the pan and dry the tips, then flip them over. I let them cook for a bit and then I add about a cup of beef stock and let them simmer until the liquid has evaporated. I used eye of round because it was on sale and it turned out very tender! Next up is the Pork Fried Wontons. They were so yummy! It was my fi...

Beef Pot Roast with potatoes and carrots

I forgot to take the picture before I cut the roast up so this is after I've already cut it into peieces. :) Here's what I did: Beef Pot Roast 2.5 pound sirloin roast a few red and gold potatoes (I was kind of using up what I had left in the bags) about 1 pound of carrots 1 can of french onion soup (this one was not condensed it said not to add water) 1/2 can of water (to make sure I have enough juice, we like a lot) salt and pepper to taste I just sliced the poatatoes and carrots and put them in the bottom. Then salted it. I actually didn't use pepper because my 5 year old doesn't really like it. Then I sat the roast on top. I poured the soup and water and a bit of salt on top. Then covered and baked at 350 for about 2.5-3 hours. I just kept checking it every so often after 2 hours to see when it was nice and tender. If I had any I would have added some beef base to this but I am out. I can't wait to get my soup bases delivered. They will probably be here early nex...

Pizza Stuffed Meatloaf

I made Pizza Stuffed Meatloaf last night. It was really good. I didn't have time to do mashed potatoes so I just did green beans. I had forgotten about a conference call I had. I left off the pepperoni and subbed Hunt's meatloaf sauce for the pizza sauce. I also topped it with the sauce instead of cheese. I used onions, mushrooms and cheese in the middle. Very tasty! I plan to make mashed potatoes today to go along with it. We'll actually eat this for dinner tonight because of the whole conference call thing. I ate a plate of it late last night. Too late for dinner. So the kids and DH had other things for dinner. Hopefully they'll enjoy this tonight. I have to work today anyway so it will be nice to not have to cook so much when I get back home. Just reheat and make the potatoes. :) Hope you all have a great day! God bless, Amanda

Cooking for your freezer- Ground beef

Life is busy for all of us. It's so easy to get so busy that instead of home cooked meals we grab food through the drive through and eat on the run. A big timesaver is cooking for your freezer. You can do this as simply or as complicated as you want. Some do once a month cooking. However, it's also handy to double up on a casserole or main dish that you're making and freeze one. This is a bit more manageable for me. For the most part, I cook meat and freeze it. Then use it to make a meal at a time. My favorite thing to cook is ground beef. I just cooked up about 10 pounds of this and put it in my freezer. It is so nice to pull that package of frozen cooked ground beef and use it for whatever I need. Spaghetti, a casserole, tacos, burritos, anything! It eliminates a step and a pan to be used. How to cook the ground beef: I place several pounds of ground beef in my stockpot and then add some water. Usually a 2-3 cups. Then season the beef however you like. This time I just us...

Beef Penne Pasta Casserole

This is one of my favorite pasta recipes. I do use beef broth instead of the bouillon. I just sub it as part of the water required. It's a great recipe to take to a family as well. Hope you enjoy it!
