Jalapeno Chicken Dip

This dip is extremely good and addictive! A friend of mine from MOPS has brought it twice to a Mom's Night Out and it disappears! So easy and so good! I highly recommend you make this soon! I made it the other night and served it with Triscuits (fire roasted tomato flavor). So yummy! Jalapeno Chicken Dip 2 8oz packages of cream cheese 1 can of cream of chicken soup 2 cups of cooked diced chicken (could use canned) shredded cheese (I used mexican style) jalapeno slices (jarred) In a sauce pot over medium heat, combine cream cheese and soup until creamy. Then add chicken and heat through. In a baking dish (I used an 8x8 dish), pour cream cheese mixture in and top with cheese. Bake at 350 degrees until cheese is nice and melted. Then remove from oven and top with sliced jalapeno peppers. Serve with crackers and/or chips and enjoy! I'm all for making things healthier and lower in fat. Bacon Cheddar Burgers

I love watching Man Vs. Food . However, it also can make me very hungry. LOL The other night he was showing hamburgers and boy did they look good! It made me want a good hamburger. So I decided to make some. I didn't measure the seasonings or sauce but this should get you close. Add more or less according to your preference. Bacon Cheddar Burgers 2.5 pounds of ground round 8 slices of bacon, cooked and crumbled 8 oz of sharp cheddar cheese, shredded 1 egg 1-2 tbsp of A1 sauce 1 tsp of season salt Mix all ingredients together and form hamburger patties. Then grill or cook on the stove top until done. These were fantastic! The picture doesn't do them justice at all. It was the tastiest burger I have ever made. I used the bacon that is precooked but made it nice and crispy in the microwave. I cooked these on the stove top because we don't have a grill but these would be fabulous on the grill! Chocolate Chip Pancakes

My family loves chocolate chip pancakes. In fact, I have very rarely made any other kind. One morning, when we lived in Ohio, I had made chocolate chip pancakes. My husband was talking about them at work later that day and most of those he worked with had never had chocolate chip pancakes. Those poor things! I don't recall ever making pancakes from scratch. I've always used a mix. Today I wanted to try homemade since I was so happy with the homemade waffles . Chocolate Chip Pancakes 1 1/2 cups all-purpose flour 3 1/2 teaspoons baking powder 1/2 teaspoon salt 1 tablespoon sugar (I used brown this time) 1 1/4 cups milk, warmed slightly in the microwave 1 egg 3 tablespoons butter, melted chocolate chips In a large bowl, sift flour, baking powder, salt and sugar together. Then toss in some chocolate chips. Lots if you like a lot of chocolate chips and less if you want to go sparingly. I always eyeball it. Cream Cheese Bars

I can't even begin to describe how good these are. They are so yummy. One of the ladies at MOPS always brings these to every meeting. They always disappear. These are really easy. Especially if you use the new uncut crescent rolls that is just a sheet of crescent dough. That makes it super simple! Please try these soon. You will be very glad that you did! Cream Cheese Bars 2 cans of crescent rolls 2 8oz bars of cream cheese, softened 1 1/2 cups of sugar 1 tsp. vanilla 1/4 cup melted butter or margarine 1 tsp. cinnamon Spray 9x13 pan with Pam. Mix cream cheese, one cup of sugar and vanilla in a mixer until well blended. Roll 1 tube of crescent rolls in pan and press seams together. Spread cream cheese mixture onto dough. Unroll 2nd tube of crescent rolls onto mixture. Pour melted butter on top (I used a brush to brush it around and make sure it got everything coated). Mix 1/2 cup of sugar with cinnamon. Pepperjack Roast Beef Sandwiches

On Saturday, I cooked a roast in the slow cooker. No real recipe. Just cut up a bunch of red potatoes and carrots and placed them in the bottom of the crockpot. Placed the roast on top of those and poured in about 2 cups of beef broth. Then salt and peppered the roast. Cooked all day in the slow cooker. Then I removed the roast and veggies and used the liquid to make a gravy. Just heated it in a sauce pan on the stove and added some corn starch that I had combined with a few tablespoons of cold water. Add corn starch mixture when the cooking liquid has come to a boil. It was a large roast and I had leftovers. Only I was in the mood for something with a bit of spice. So I created Open Faced Roast Beef Sandwiches covered with Pepperjack Cheese! It was delicious! Chocolate Chip Zucchini Bread

A good friend of mine brought by 2 large zucchini that she had. I had been wanting to make zucchini bread for awhile but never bought any for that purpose. So when she offered some extra produce she had I was excited! This is the recipe I decided to try. It's adapted from this recipe at Allrecipes . Chocolate Chip Zucchini Bread 3 cups all-purpose flour 1 teaspoon salt 1 teaspoon baking soda 1 teaspoon baking powder 3 teaspoons ground cinnamon 3 eggs 1 cup vegetable oil 1 cup white sugar 1 cup of brown sugar 3 teaspoons vanilla extract 2 cups grated zucchini 1 cup chopped chocolate chips Grease and flour two 8 x 4 inch pans. Preheat oven to 325 degrees F (165 degrees C). Sift flour, salt, baking powder, soda, and cinnamon together in a bowl. Add choclate chips and toss them around in the flour mixture. Beat eggs, oil, vanilla, and sugar together in a large bowl. Add sifted ingredients to the creamed mixture, and beat well. Stir in zucchini until well combined. Pour batter into pre...

My first REAL CVS Deal!

I did try this one other week but I don't think I got a good deal so I didn't post it. However, this week was different and I am excited about doing this more often. Now, since I'm new at this I messed one thing up and had to refund. Plus, there were no signs for any of this stuff so it was hard to tell which thing was the ECB's. I'm sure I'll get better at it each time. Fiesta Salad

I made a double recipe of this for our Ladies Home Fellowship last night. We get together once a month and usually have a themed get together. Last night it was hawaiian cruise. Our host, Wendy, did an awesome job turning her back deck into a cruise deck for us. The slight breeze made me really feel like we were in Hawaii. Well, at least I can pretend! :) Once the sun went down it was totally awesome with lights and candles. Had a great time! Here's how to make this yummy recipe. Fiesta Salad 2 cups of corn (last night I used fresh and sauteed it a bit, you can use canned, frozen, etc.) 1 avocado, diced 4 roma tomatoes, diced 1 small vidalia or red onion diced 1/2 tsp lime zest juice of half a lime handful of cilantro, chopped 4-6 tbsp of ranch dressing (just use what you want for your desired creaminess) can of black beans, rinsed and drained salt and pepper to taste Just combine all ingredients in a bowl and mix together well. Frugal Soup Stocks without even cooking!

I just wanted to share this with you as something that works for me. I get soup bases from Soupbase.com . This stuff is amazing. And I think I figured that the chicken base that makes 5 gallons works out to about .15 a cup! That's a great savings even over store brands. I usually try to order several things of it at once to save on shipping. They have a email list you can join to receive specials and such. This is restaurant quality stuff. I love having this in the freezer ready to go. It keeps longer in the freezer than the fridge. I used the bacon base the other day in my green beans to make them all yummy with southerny goodness. :) You have to cook them an hour or two as well. I'm not affilated with them in any way but absolutely love their products! I have used the bacon base, beef base, chicken base, and vegetable base. So these soup bases definitely work for me!
