Orange Cashew Chicken

So with all that 2020 has brought us, I have spent more time at home than ever. During this time, I have discovered YouTube channels that I love. Most of them revolve around cooking. In fact, I have decided to start my own channel, so stay tuned for that! I hope to post my first video soon.

Orange Cashew Chicken (Jess and The Boys)
- 4 large boneless skinless chicken thighs
- 1 Tbsp. fresh chopped mint
- Salt and pepper to taste
- 1 tsp. onion powder
- 1/2 Tbsp. ground ginger
- 3 Tbsp. brown sugar
- 1 1/2 Tbsp. minced garlic
- 2 Tbsp. soy sauce
- 2 Tbsp. rice vinegar
- 1 Tbsp. duck sauce
- 6 oz. frozen orange juice concentrate
- 1 C. chicken broth
- 1 Tbsp. corn starch
- 1/2 cup chopped roasted salted cashews
- 2 Tbsp. butter, in small pieces

*Chop chicken, add to 9x13 baking dish.
*Mix all but last 2 ingredients. Pour over chicken.
* Sprinkle with cashews and butter
* Cover with foil, bake at 350° for about 30 mins, until sauce is thickened and chicken is cooked through.
*Serve over jasmine rice, top with sliced green onions.

My notes: I followed the recipe as is with the exception of the fresh mint and the sliced green onions. I didn’t have any, so I left it out.

I did add some chunked onion to it (one medium and one small).

This was so good! I served it with fried rice (recipe coming soon). I didn’t add any additional salt. This was so very good! We aren’t eating out, so this was the taste of Chinese food that I had been craving! I plan to make it again and also make some egg rolls and cream cheese wontons. It would go so well with it.

Salt-Free Ranch Dressing Mix

I don't know about you but I really enjoy ranch dressing. The stuff in the bottle is okay, but if you look at the ingredients it contains some not so good stuff like MSG and added sugar. It also has a lot of added sodium. I'm trying to watch my sodium so I decided to make a salt-free ranch mix, then I can control the salt whenever I make the dressing or add it to a recipe. It's super easy to make your own ranch mix. If you make a batch of this up, you can have it already on hand to make ranch dressing or add it into other recipes. Let's get started! A Civil War Recipe..... Oatmeal Pie

Princess came home with an assignment to to a Civil War project. There were several options but she and I always gravitate to the ones that involve cooking. So we chose to make a recipe from the Civil War time to share with her class. Can I just say how grateful I am for the internet when it comes to these school projects? We looked online and found many different recipes. I wanted one that used ingredients I already had on hand and hopefully one that would be a bit tasty. I finally found a forum where people were sharing Civil War recipes and someone had shared one for Oatmeal Pie from Charleston, South Carolina. Apparently, during the Civil War, pecans were in short supply. So oatmeal was subbed for pecans to make a sort of mock pecan pie. This recipe is very tasty and really easy.
