Winter Wonderland




The kids went back to school last week, on Tuesday to be exact. I had planned to get to the store last week and make some new things to post on my blog. Well, unfortunately snow changed my plans. I did not leave my house after Wednesday of last week due to the weather. I won't drive in anything like snow or ice. And we had both. I did get out yesterday and went to Food Lion. They had some good deals. Unfortunately I wasn't able to get everything I needed and had planned to go back out today. Only now I am hearing there is lots of black ice out after some precipitation last night/early morning. I'm ready for it to thaw out!



The kids have now been out of school due to weather since Thursday. I honestly don't see them going back tomorrow either. I do love having them home. I just haven't enjoyed being stuck in the house. Not for this long anyway.



It's supposed to get warmer on Thursday. I am ready for it! Bring on the warmer temps!

We missed you last night at Chick-Fil-A, it was really good to get the kids out of the house and burn some energy off. I love having the kids at home (that doesn't get on my nerves, but when they get on each others nerves, then that bothers me). After having 2 weeks off for Christmas and 1 week off for snow, they are starting to get on each others nerves.

Vegetable Lo Mein

Okay, I already messed with the menu. :) I didn't get to get to the store in time to get the potatoes for mashed potatoes to have with the meatloaf. So I had to make the lo mein instead of the meatloaf yesterday. I kind of did my own thing but with help from this Chicken Chow Mein recipe and this Vegetable Lo Mein recipe. First I boiled the noodles. Then fried them in the skillet in a bit of oil. This really helped them not stick together. And I'm sure gives it more flavor. I took the noodles out of the pan and put them in a dish until it was time to add them back. I then started stir frying the veggies. Mushrooms, onions first. Then a bag of coleslaw mix (cabbage and carrots), some bean sprouts. I microwaved a small bowlful of broccoli and added that. I also added a can of sliced water chestnuts. I mixed one cup of chicken broth and a tablespoon of cornstarch and added that to the veggies. Then added a tablespoon of reduced sodium soy sauce and a tablespoon or so of oyster f...
