Cracker Barrel Coca Cola Cake


Tonight we had our Mom's Night Out with MOPS and our theme was Christmas in July. So we all brought special Christmas themed dishes. It was a lot of fun! Our host even decorated her house up for the occasion.

I decided to make Cracker Barrel Coca Cola Cake. It's one of my favorite cakes and very easy as well.

Sorry the picture isn't the best. I hated to cut a piece before I took it to the get together. So I took a picture of it whole. It is very good though!

Cracker Barrel Double Fudge Coca Cola Cake

Ingredients:
1 C. Coca-cola
1/2 C. oil
1 stick Margarine
3 Tbsp. cocoa
2 C. sugar
2 C. flour
1/2 tsp. salt
2 eggs
1/2 C. buttermilk
1 tsp. baking soda
1 tsp. vanilla

Preparation:

In a sauce Pan, Bring Coca-Cola, Oil, Margarine, and cocoa to a boil. In a bowl, mix the sugar, flour and salt. Pour into the boiling liquid and beat well. Add the eggs, Buttermilk, baking soda and vanilla. Beat well. Pour into a greased and floured sheet cake pan and bake at 350 degrees for 20-25 minutes.

Frosting
1/4 lb. Margarine
3 Tbsp. cocoa
6 Tbsp. cream or milk
1 tsp. vanilla
1 lb. confectioners sugar

In a saucepan, combine the butter, cocoa, and milk. Heat until the butter melts. Beat in the remaining ingredients, and spread on the hot cake. Cool and cut.

What recipes remind you of Christmas? I can't believe it will be here in about 5 months!

Recipes that make me think of Christmas... mmm....

Quick Chocolates
1/2 bag semi sweet chips
1/2 bag butterscotch chips
1 cup cashews (or favorite nut)
12 oz. bag crispy chow mien noodles

In a big bowl, toss together the noodles and nuts, set aside.
In a med. microwave bowl, melt the chips together. Stir well to blend.
Pour over noodle/nuts. Stir and toss until evenly coated. It is okay to break up the noodles some as you mix.
Drop by spoonfuls on waxed paper. Once hardened, store in air-tight containers.
You can also use all semi-sweet chips for a more dark chocolate version.

Cheery Cherry Cookies
use your favorite shortbread recipe. Shape dough into balls (about a tbs.). Press 1/2 a maraschino cherry on the top. Bake until the edges just start to get golden.

I can't taste the cola in it and the kids kept asking me why it doesn't taste like coke. LOL I'm not sure what it does for it. It is a very good and rich cake though!

There is a take and bake place in town that has the most amazing lemon chicken artichoke soup. I decided to try to make a copy of it at home. Salt-Free Ranch Dressing Mix

I don't know about you but I really enjoy ranch dressing. The stuff in the bottle is okay, but if you look at the ingredients it contains some not so good stuff like MSG and added sugar.
