Breakfast for dinner

The last couple weeks of the month is usually the tightest for us. Especially since I'm out of work right now. So I'm trying to implement one night every week of breakfast for dinner. Tonight we had french toast.

I just added three eggs, a tsp of vanilla, some cinnamon and some milk in a bowl. I didn't measure the milk. There are some recipes I'd like to try for french toast but tonight was just going to be quick so I didn't have time to find the recipes.

Served it with powdered sugar and cinnamon on top. My daughter had a little syrup on hers. Everyone really enjoyed it so I am going to have to make it more often.

So here's a cost breakdown...
milk- .25
cinnnamon- .05
vanilla- .25
three eggs- .25
half a loaf of texas toast- .60 (bought on sale at kroger)
So about a $1.40 for that.

Now, that was only for three people. My husband had eaten a bit before and wasn't hungry and my 4 year old ate a hot dog). But even if you double it for 6 people let's say, it'd only be $2.80. Plus we had some grapes from being on sale for .98 a pound as well. Very economical dinner!

We frequently do breakfast for dinner.

Eggs, homemade hash browns, sausage (if it is on sale)
Huevos Rancheros (leftover refried beans & mex rice, poached eggs topped with heated salsa on two lightly fried corn tortillas)
Chorizo, eggs and potatoes (mexican sausage scrambled with eggs and leftover baked tater chunks, served with a little cheese and flour tortillas)
French toast & canned peaches
Pancakes, homemade syrup, eggs pancakes can be rice, oat, corn meal or buckwheat for variety.
Toad in the Hole(butter bread both sides, cut big hole, put bread in fry pan & crack egg into the middle - fry both sides and don't forget to fry the "hole" you cut out)[friends from England serve this with baked beans]
Breakfast burritos (scrambled eggs, leftover taters +/or meat, cheese, salsa in a tortilla)
Crustless Quiche (use leftover veggies and meats in a greased pie plate, cheese if you have it, covered with a mix of 4 eggs, 1 c. milk, 1/4 c. biscuit mix, salt and pepper & a quick dash of tabasco or other like sauce. Bake at 350*F until done)

Lemon Chicken Artichoke Soup

There is a take and bake place in town that has the most amazing lemon chicken artichoke soup. I decided to try to make a copy of it at home. This soup isn’t exactly like the one at the local shop here, but it’s close. This recipe is so good and highly addictive! I encourage you to try it as soon as you can! Salt-Free Ranch Dressing Mix

I don't know about you but I really enjoy ranch dressing. The stuff in the bottle is okay, but if you look at the ingredients it contains some not so good stuff like MSG and added sugar. It also has a lot of added sodium. I'm trying to watch my sodium so I decided to make a salt-free ranch mix, then I can control the salt whenever I make the dressing or add it to a recipe.
